Is your garden growing wild with zucchini? Don’t worry, we can grill them up for dinner! Cut, oil and grill it is that simple!

Flavor your steaks for whatever mood you are in: Spanish, Italian or Cajun. Serve with a healthy side dish or lay them over a huge green salad! Very satisfying and filling!

Great for those weekend nights on the back terrace with friends and family. Kids and adults love Grilled Zucchini Steaks!

Grilled Zucchini Steaks

The key to great grilled zucchini steaks is to allow the zucchini to grow large. Most people pick zucchini when they are tender at a length between 5″-8″ for recipes. Let them grow!

Harvest zucchini when they are full and at a length of 9″-15″. You can prepare them in two ways. Cut in 1/3 inch diagonal coins or cut in long strips 1/3 inch thick.

In a small bowl combine seasonings of choice with safflower oil (needs to be great for high heat). Brush both sides of steaks and lay on a low to medium heat grill. Grilling at a lower heat for a longer period of time keeps nutrients more intake. Cooking high and fast destroys nutrients.

If you are brave, cut them thicker and brush them with Cajun or Blackening seasonings! Put them onto the flame and turn every 5-10 mins. This recipe is a crowd-pleaser! Get the recipe below.

Grilled Zucchini Steaks Recipe

Is your garden growing wild with zucchini? Don’t worry, we can grill them up for dinner! Cut, oil and grill…that simple! Flavor for whatever mood you are in: Spanish, Italian, Cajun. Serve with a healthy side dish or lay them over a huge green salad!

INGREDIENTS

  • 2-3 large zucchini 9″-12″
  • 3 tbsp safflower oil oil for high heat preferred
  • 1 tbsp seasoning of choice Cajun, Italian, Spanish
  • 1 large onion optional

INSTRUCTIONS

  3. Brush both sides of steaks and lay on a low to medium heat grill. Grilling at a lower heat for a longer period of time keeps nutrients more intake. Cooking high and fast destroys nutrients.
  4. Put them onto the flame and turn every 5-10 mins. Should be done 30-45 minutes later, complete with grill marks!

This recipe is a crowd-pleaser! Serve with a side of whole grain spaghetti and healthy tomato sauce (make your own raw sauce) and a side salad. Or serve over a large garden salad! Enjoy with family and friends!

Optional: if you have a grilling pan (I do not suggest using foil wrap) and grill cut onion and garlic to serve alongside your Grilled Zucchini Steaks!

RECIPE NOTES
Can use indoor grilling systems. Can also grill on cast iron stove top grill. Follow the recipe as you would for a gas or charcoal grill. Happy grilling you veggie lovers!
